Ingredients

  • 1/3 cup margarine, melted
  • 1 egg
  • 2 teaspoons water
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 2 cups fresh vegetables (carrot slices and cauliflowerets)

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Brush the bottom of a 13 x 9 x 2-inch pan with 1 tablespoon of melted margarine.
  3. In a shallow dish, beat the egg and water with a fork.
  4. In another dish, mix the flour and salt.
  5. Dip the vegetables into the egg mixture, then roll in the flour mixture to coat.
  6. Place the coated vegetables in the prepared pan.
