  2. In a large mixer bowl, beat butter or margarine until softened.
  3. Add sugar and beat until fluffy.
  4. Add egg, vanilla, and peppermint extract; beat well.
  5. Add flour mixture and beat until well mixed.
  6. Divide dough into thirds.
  7. Stir red food coloring into one third, green food coloring into another third, leave the third plain.
  8. Cover each portion and chill about 1 hour.
  9. Roll each dough into 1/2-inch diameter ropes.
  10. Braid one rope of each color together. Slice the braided ropes into 1/2-inch pieces.
  11. Shape each slice into a ball.
  12. Place on cookie sheet and flatten to 1/4-inch thick with the bottom of a sugar-dipped glass.
  13. Bake in a 375°F oven until done (8 to 10 minutes for large cookies, 6 to 8 minutes for small ones).
  14. Remove and cool.
