Instructions

  1. Cook bacon until crisp and crumble.
  2. Reserve 2 tablespoons bacon drippings.
  3. In a 2-quart casserole dish, put bacon drippings, diced onion, and crushed garlic.
  4. Cook in a microwave oven, covered, for about 3 minutes.
  5. Add 1/2 cup water and the rest of the ingredients, including liquid from beans.
  6. Mix until well blended.
  7. Cook, covered, for 10 to 12 minutes.
  8. Place half of the soup in a blender for 10 seconds and return to casserole dish.
  9. Repeat with the other half of the soup.
  10. If soup is too thick, add water to make it the desired consistency.
  11. Cook for another 3 minutes in microwave.
  12. Just before serving, stir in reserved bacon.
