Ingredients

  • 16 oz. dried kidney beans
  • 2 lb. ham hocks or seasoning meat
  • 1 medium chopped onion
  • 2 chopped garlic cloves
  • 1/4 chopped bell pepper
  • pepper and salt to taste

Instructions

  1. Sort and rinse the dried kidney beans, then soak them in water for several hours or overnight.
  2. Drain the beans and place them in a large pot with the ham hocks or seasoning meat.
  3. Add chopped onion, garlic cloves, and chopped bell pepper to the pot.
  4. Pour in enough water or broth to cover the ingredients.
  5. Bring the mixture to a boil, then reduce heat to low and simmer uncovered for about 2 hours, or until beans are tender and flavors meld.
  6. Taste the liquid before adding salt; then add salt and pepper to season as desired.
  7. Serve hot, ensuring each portion has plenty of beans and meat.
