Kim'S Mexican Rice

Creamy and flavorful Mexican rice baked with cheese, green chiles, and sour cream, perfect as a comforting side dish or main for family dinners and gatherings.

Ingredients

  • 2 cups whole grain rice
  • 1 can cream of chicken soup
  • 2 small cans green chiles
  • 1 (16 oz.) carton sour cream
  • 1 medium chopped onion
  • 3 cups grated Cheddar cheese
  • 2 tablespoons oil

Instructions

  1. Simmer the rice in 4 cups of water for 20 minutes in a covered saucepan; do not stir or remove the lid or the rice will get sticky.
  2. In a large pan, sauté the chopped onion in oil until tender.
  3. Turn off the heat and add the cream of chicken soup, sour cream, diced green chiles, and 2 cups of grated Cheddar cheese.
  4. When the rice is done, stir it into the mixture in the pan.
  5. Pour the mixture into a 9 x 13-inch baking dish and top with the remaining cheese.
  6. Optionally, top with black olives or chopped chicken breast if desired.
  7. Bake at 350°F (175°C) for approximately 30 to 40 minutes until heated through and bubbly.
