Ingredients

  • 2 lb. carrots, sliced
  • 1 small bell pepper, sliced
  • 1 onion, sliced
  • 1 can tomato soup, undiluted
  • 1/2 c. salad oil
  • 1 c. sugar
  • 3/4 c. vinegar
  • 1 tsp. mustard (optional)
  • 1 tsp. Worcestershire sauce (optional)

Instructions

  1. Bring a pot of salted water to a boil and add a handful of dill stems.
  2. Add the sliced carrots and cook until just tender.
  3. In a separate pan, sauté sliced bell pepper and onion until soft.
  4. Mix the cooked carrots, sautéed peppers and onions with undiluted tomato soup, salad oil, sugar, vinegar, mustard (if using), and Worcestershire sauce (if using).
  5. Simmer the mixture for a few minutes to blend flavors.
