Ingredients

  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 cups sugar
  • 2/3 cup shortening
  • 3 eggs
  • 1 1/4 teaspoons vanilla
  • 1/4 teaspoon salt
  • 1/2 cup cocoa
  • 1 cup beer or water
  • 1/2 to 3/4 cup sauerkraut, chopped, rinsed, and drained

Instructions

  1. Cream sugar and shortening together until light and fluffy.
  2. Add eggs, vanilla, salt, and cocoa to the creamed mixture and mix well.
  3. Sift together flour, baking soda, and baking powder.
  4. Gradually add the sifted dry ingredients and beer or water to the mixture, mixing until smooth.
  5. Fold in the chopped, rinsed, and drained sauerkraut.
  6. Pour the batter into a greased and floured pan.
  7. Bake in a preheated oven at 375°F (190°C) for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool and frost with cream cheese frosting before serving.
