Ingredients

  • 2 cups cooked brown rice
  • 3/4 cup grated sharp Cheddar cheese
  • 2 eggs
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt
  • 1 pound fresh spinach
  • 2 tablespoons wheat germ or bread crumbs
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine cooked brown rice and grated Cheddar cheese in a bowl.
  3. In a separate bowl, beat eggs and mix in chopped fresh parsley, salt, and pepper.
  4. Add the egg mixture to the rice and cheese mixture, then fold in the fresh spinach.
  5. Pour the mixture into an oiled casserole or large pie plate.
  6. Mix wheat germ or bread crumbs with melted butter and spread on top of the casserole.
  7. Bake for 35 minutes or until the pie is set and golden brown.
