Ingredients

  • 4 eggs, separated
  • 3 Tbsp. water
  • 1 tsp. vanilla extract
  • 1/4 c. sugar
  • 3/4 c. sifted cake flour
  • 1/2 tsp. baking powder
  • vegetable cooking spray

Instructions

  1. Beat egg yolks in a large bowl at high speed of an electric mixer for 5 minutes or until thick and lemon colored.
  2. Add sugar, water, and vanilla, mixing just until blended.
  3. Combine flour and baking powder.
  4. Sift flour mixture over yolk mixture; gently fold in flour mixture.
  5. Beat egg whites until stiff peaks form.
  6. Gently fold egg whites into yolk mixture.
  7. Spread batter evenly in a 15 x 10 x 1-inch jellyroll pan that has been coated with vegetable cooking spray and lined with parchment paper.
  8. Bake at 325° for 15 minutes.
  9. Remove from oven and cool completely.
  10. Cut into 1 x 2 1/2-inch bars.
