Ruby'S Broccoli Salad

A vibrant broccoli salad with hard-boiled eggs, olives, and a tangy mayonnaise dressing, perfect for potlucks, picnics, or a quick, nutritious side dish.

Ingredients

  • 1 bunch broccoli
  • 1 small or medium onion
  • 2 tsp sugar or equivalent sweetener
  • 2 Tbsp lemon juice
  • salt
  • pepper
  • 1 small can pitted olives
  • 5 hard-boiled eggs

Instructions

  1. Cut broccoli into bite-sized pieces, including the stalk (peel if tough).
  2. Blanch or steam the broccoli until just tender; drain and cool.
  3. Chop the onion finely.
  4. Mix the cooled broccoli, chopped onion, sliced olives, chopped hard-boiled eggs, sugar or sweetener, lemon juice, salt, and pepper in a bowl.
  5. Stir in mayonnaise until well combined.
  6. Chill in the refrigerator if desired before serving.
