Bobotie
A flavorful South African dish combining spiced minced meat, aromatic curry, sweet raisins, and almonds, baked to perfection and served with rice and chutney for a hearty meal.
Ingredients
- 2 onions ⓘ
- cooking oil or butter ⓘ
- 2 or 3 lb minced meat (mutton beef or leftover meat) ⓘ
- 1 slice bread ⓘ
- 1 cup milk ⓘ
- 2 eggs ⓘ
- 1 tablespoon curry powder
- 4 lemon or bay leaves or grated yellow rind of 1 lemon ⓘ
- 1 1/2 tablespoons sugar ⓘ
- 2 teaspoons salt ⓘ
- 1/2 teaspoon pepper ⓘ
- 1/2 tablespoon turmeric ⓘ
- 2 tablespoons vinegar or juice of 1 lemon ⓘ
- 6 almonds, quartered ⓘ
- 1/2 cup seedless raisins ⓘ
- 3 tablespoons chutney ⓘ

Instructions
- Preheat the oven to 350°F (175°C).
- Peel and slice the onions thinly. Fry lightly in hot oil or butter.
- If using uncooked meat, fry it with the onions until slightly cooked and crumbly.
- Soak the bread in the milk, then squeeze out the milk and mash the bread.
- Mix all ingredients except 1/2 cup milk, 1 egg, and lemon leaves in a bowl.
- Spoon the mixture into a greased ovenproof dish.
- Roll up the lemon or bay leaves (or lemon rind) and insert them upright into the meat mixture.
- Bake for 1 hour if using uncooked meat, or 45 minutes if using cooked meat.
- Beat the remaining egg with 1/2 cup milk and pour over the meat 30 minutes before the end of baking.
- Serve hot with rice and chutney.
