A flavorful South African dish combining spiced minced meat, aromatic curry, sweet raisins, and almonds, baked to perfection and served with rice and chutney for a hearty meal.

Ingredients

  • 2 onions
  • cooking oil or butter
  • 2 or 3 lb minced meat (mutton beef or leftover meat)
  • 1 slice bread
  • 1 cup milk
  • 2 eggs
  • 1 tablespoon curry powder
  • 4 lemon or bay leaves or grated yellow rind of 1 lemon
  • 1 1/2 tablespoons sugar
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2 tablespoon turmeric
  • 2 tablespoons vinegar or juice of 1 lemon
  • 6 almonds, quartered
  • 1/2 cup seedless raisins
  • 3 tablespoons chutney
  • rice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and slice the onions thinly. Fry lightly in hot oil or butter.
  3. If using uncooked meat, fry it with the onions until slightly cooked and crumbly.
  4. Soak the bread in the milk, then squeeze out the milk and mash the bread.
  5. Mix all ingredients except 1/2 cup milk, 1 egg, and lemon leaves in a bowl.
  6. Spoon the mixture into a greased ovenproof dish.
  7. Roll up the lemon or bay leaves (or lemon rind) and insert them upright into the meat mixture.
  8. Bake for 1 hour if using uncooked meat, or 45 minutes if using cooked meat.
  9. Beat the remaining egg with 1/2 cup milk and pour over the meat 30 minutes before the end of baking.
  10. Serve hot with rice and chutney.
