Lamb Meatball Wraps

Ingredients

  • 9 oz ground lamb
  • 1 None small carrot, coarsely grated
  • 1/4 cup dried breadcrumbs
  • 2 tbsp parsley, chopped
  • 1 None large egg, lightly beaten
  • 1 tbsp tomato sauce
  • 4 None flatbreads
  • 2/3 cup hummus
  • 5 oz lettuce, shredded

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a bowl, combine meat, carrot, breadcrumbs, parsley, egg and tomato sauce. Season to taste.
  3. Mold tablespoonfuls of meat mixture into balls. Place on prepared baking sheet. Bake for 15-20 mins, until golden and cooked through. Drain on paper towels.
  4. Spread flatbreads with hummus. Top with lettuce, pepper, cheese and halved meatballs. Wrap in plastic wrap and chill until ready to serve.
