Ingredients

  • 1/2 to 1 lb. leftover roast lamb or broiled lamb from barbecue
  • 27 oz. can dark red beans or prepared dried beans
  • 3 cups canned, cut tomatoes
  • 3 teaspoons chili powder
  • salt to taste
  • chopped onion
  • chopped parsley
  • minced garlic

Instructions

  1. Mix together the chopped onion, chopped parsley, and minced garlic.
  2. Cut the cooked lamb into small pieces.
  3. Brown the lamb in a small amount of oil or in its own fat.
  4. Add the onion mixture and sauté for 5 minutes.
  5. Add the canned tomatoes, chili powder, and salt if needed; stir in the red beans.
  6. Simmer the mixture for about 20 minutes.
  7. Serve hot, very good with cornbread.
