Lamb Theresa

Ingredients
- 1 tsp. olive oil ⓘ
- 2 cloves garlic ⓘ
- 4 Tbsp. ketchup ⓘ
- 1 Tbsp. parsley stalks ⓘ
- 1 1/4 c. tomato juice
- 8 oz. cooked roast lamb or cooked roast beef ⓘ
- 1 (12 oz.) can peeled tomatoes, drained ⓘ
- 1 (15 oz.) can kidney beans, drained
- 2 Tbsp. arrowroot or cornstarch ⓘ
- 1/4 c. wine ⓘ
- 1 c. chopped broccoli florets
- 1 c. quartered mushroom caps ⓘ
- 1/4 tsp. pepper ⓘ
Instructions
- Heat olive oil in a large skillet and sauté chopped garlic for 1 minute.
- Add ketchup and cook until color darkens.
- Add chopped parsley stalks and tomato juice.
- Cook for 2 minutes.
- Add cooked roast lamb or beef, drained tomatoes, and kidney beans.
- Bring to a boil, reduce heat, and simmer for 5 minutes.
- Remove from heat and stir in arrowroot or cornstarch mixed with wine.
- Return to heat and stir until thickened.
- Add chopped broccoli florets, quartered mushroom caps, and pepper.
- Bring to a boil, reduce heat, and simmer for 5 minutes.
- Serve with turmeric-seasoned cooked rice.
