  2. Add tomato sauce, seasonings, and 2 cups water. Cover and simmer for 1 1/2 hours until meat is tender.
  3. Add remaining water and bring to a boil.
  4. Add manestra (orzo). Stir once or twice.
  5. Simmer for 20 minutes more.
  6. Serve hot with grated cheese.
