Ingredients

  • 1 stalk celery
  • 1 sweet pepper
  • 1 clove garlic
  • dill seed
  • pickling spices
  • green tomatoes
  • 1 quart white vinegar
  • 2 quarts water
  • 1 cup kosher salt

Instructions

  1. Combine the vinegar, water, and salt in a pot and boil for 5 minutes.
  2. Cut green tomatoes to the desired size and place them into Mason jars.
  3. Fill each jar with the boiling vinegar-water mixture, leaving a 1/2-inch space from the top.
  4. Seal the jars and let them sit for 4 to 6 weeks before using.
