Ingredients

  • 1 lb. baby carrots or regular carrots, cut into bite-sized diagonal pieces
  • 1/2 c. mayonnaise
  • 1 Tbsp. horseradish
  • 1/3 c. green onions, chopped fine
  • 1/2 c. crushed Ritz crackers
  • 2 Tbsp. melted butter

Instructions

  1. Cook carrots in slightly salted water until tender-crisp.
  2. Arrange cooked carrots in a single layer in an oblong baking dish.
  3. In a bowl, mix mayonnaise and horseradish.
  4. Add chopped green onions to the mayonnaise mixture.
  5. Spread the mayonnaise mixture over the cooked carrots.
  6. Combine crushed Ritz crackers with melted butter.
  7. Sprinkle the cracker mixture evenly over the carrots.
  8. Bake in a preheated oven at 375°F (190°C) for about 10 minutes or until golden brown.
