Ingredients

  • 3 lb. ground turkey
  • 2 cans tomato paste
  • 1 medium onion, chopped
  • 2 cloves garlic
  • 2 Tbsp. basil
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 (12 oz.) cans stewed tomatoes
  • 1 lb. whole grain lasagna noodles
  • 1 pkg. low-fat Mozzarella cheese
  • fresh grated Parmesan cheese

Instructions

  1. Cook ground turkey or turkey and hamburger with chopped onion and garlic until browned.
  2. Drain excess fat and liquid.
  3. Add tomato paste, stewed tomatoes, basil, salt, and pepper to the meat mixture.
  4. Cover and simmer the sauce for 40 minutes.
  5. Cook whole grain lasagna noodles according to package instructions and drain.
  6. Layer the sauce, noodles, and sauce again in a baking dish, ending with a layer of sauce on top.
  7. Sprinkle with shredded low-fat mozzarella cheese and grated Parmesan cheese.
  8. Bake at 350°F (175°C) for 20 minutes or until cheese is bubbly and golden.
