Ingredients

  • 1 1/4 cups scalded milk
  • 2 1/2 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 1/4 cup soft shortening
  • 2 packages yeast
  • 1/4 cup warm water
  • 3 1/4 cups sifted flour

Instructions

  1. About 1 1/2 hours before dinner, prepare the dough.
  2. Into scalded milk in a large bowl, stir in sugar, salt, and soft shortening.
  3. Cool the mixture until lukewarm.
  4. In a small bowl, sprinkle or crumble the yeast into warm water.
  5. Stir until dissolved.
  6. Add the yeast mixture into the lukewarm milk mixture.
  7. Add sifted flour and stir until well blended, about 1 minute.
  8. Cover with a towel and let the dough rise until doubled in size.
  9. Stir the batter well, then beat vigorously for about 1/2 minute.
  10. Fill greased muffin pan cups with the batter or pinch off portions and place in the pan.
  11. Bake at 400°F (200°C) for about 25 minutes.
