Ingredients

  • 4 cups whole, raw almonds
  • butter
  • 1 egg white
  • 1/3 cup white granulated sugar
  • 1/3 cup dark brown sugar, packed
  • 2 tablespoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 350°F.
  2. Spread almonds in a single layer in a baking pan.
  3. Bake for 8 to 10 minutes until lightly toasted.
  4. Remove from oven and cool completely, about 30 minutes.
  5. Reduce oven temperature to 300°F.
  6. Generously grease two baking pans.
  7. In a bowl, whisk egg white until frothy.
  8. Add white granulated sugar, dark brown sugar, vanilla extract, ground cinnamon, and salt to the egg white; mix well.
  9. Add the cooled almonds to the mixture and toss to coat.
  10. Spread the coated almonds evenly in the prepared baking pans.
  11. Bake at 300°F for about 20-25 minutes, stirring occasionally, until golden and crispy.
  12. Allow to cool completely before serving.
