Ingredients

  • 3 green onions, chopped
  • 2 Tbsp. soy sauce
  • 2 Tbsp. fresh lemon juice
  • garlic powder (a couple of good shakes)
  • 1 tsp. black pepper
  • 1 tsp. celery salt
  • 1/4 c. corn or canola oil

Instructions

  1. Mix all ingredients together, adding oil last.
  2. Pour over boneless, skinless chicken breasts in a glass dish and marinate in refrigerator (covered) for several hours.
  3. Grill chicken on barbecue grill, basting with marinade occasionally.

Tips & Substitutions

For a more vibrant flavor, let the marinade sit for at least an hour before adding it to the chicken. If you don't have green onions, you can substitute them with finely chopped regular onions. For a spicy kick, consider adding a dash of cayenne pepper or using a spicy soy sauce. This marinade also works great with tofu for a delicious vegan option.

Serving Suggestions

Serve the grilled chicken fajitas with warm tortillas, fresh guacamole, and America Samo'S Fresh Tomato Salsa for a delicious meal. Pair with a side of Calabacita for a colorful vegetable addition. To round out the meal, consider serving with a refreshing Mexican Quickie salad for a complete dining experience.

Storage & Reheating

Store any leftover marinated chicken in an airtight container in the refrigerator for up to 2 days. When reheating, do so gently in a skillet over low heat to prevent drying out. If you have extra marinade, you can simmer it on the stove for a few minutes and use it as a sauce.
