Ingredients

  • 1 small fryer, cut up
  • 5 to 6 medium zucchini, chopped
  • 1 (10 oz.) package frozen corn
  • cumin
  • pepper
  • garlic
  • salt
  • 1/2 small onion, chopped
  • 1 small tomato, chopped
  • tomato sauce

Instructions

  1. Brown the fryer in a deep saucepan using 3 tablespoons of shortening.
  2. Add chopped onion and tomato, then brown.
  3. Add chopped squash, frozen corn, and seasonings to taste.
  4. Stir in 4 tablespoons of tomato sauce.
  5. Cover and simmer for about 1 1/2 hours, stirring occasionally.
