Ingredients

  • 2 small bell peppers, chopped
  • 2 small onions, chopped
  • 3 cloves garlic, minced
  • 2 lb. deboned chicken
  • 1 Tbsp. chili powder
  • 1 1/4 tsp. salt
  • 1 can cream of onion soup
  • 1 Tbsp. lemon juice
  • 8 oz. cream cheese
  • 7 tortillas
  • 3 c. shredded Cheddar cheese

Instructions

  1. Brown chopped bell peppers, onions, and minced garlic in a skillet.
  2. Add bite-sized chicken pieces and continue to brown. Drain excess fat.
  3. Stir in chili powder and salt. Set aside.
  4. Blend cream cheese, cream of onion soup, and lemon juice until smooth. Set aside.
  5. In a crock-pot, layer tortillas, meat mixture, cream cheese mixture, and shredded Cheddar cheese.
  6. End with a layer of Cheddar cheese on top.
  7. Cover and cook on low for about 4 hours.
