Ingredients

  • 2 c. flour
  • 2 Tbsp. sugar
  • 1/2 lb. butter
  • 1 lb. cream cheese
  • 1 c. confectioners sugar
  • 1 large container Cool Whip
  • 2 pkg. Lemon Pie Filling

Instructions

  1. In a bowl, mix flour and sugar, then cut in butter until the mixture resembles coarse crumbs.
  2. Press the dough into a 9 x 13-inch baking dish or pan.
  3. Bake at 350°F for 15 minutes or until golden brown.
  4. Allow the crust to cool.
  5. Prepare lemon pie filling as directed, then cool completely.
  6. Spread the cooled lemon filling over the crust.
  7. In a large bowl, beat cream cheese until smooth.
  8. Add confectioners' sugar and mix well.
  9. Fold in Cool Whip until well combined.
  10. Spread the cheese mixture over the lemon filling.
  11. Chill the layered cheesecake in the refrigerator before serving.
