A colorful layered Mexican salad combining refried beans, seasoned beef, fresh tomatoes, green onions, and melted cheese — perfect for parties and sharing with friends.

Ingredients

  • 1 can refried beans
  • 16 oz. sour cream
  • 4 large tomatoes
  • 12 oz. grated Cheddar cheese
  • 1/2 lb. hamburger
  • 1 package taco seasoning
  • 1 bunch green onions

Instructions

  1. Brown and drain the hamburger.
  2. Let the cooked hamburger cool.
  3. Heat the refried beans.
  4. Spread the heated refried beans evenly on the bottom of a 9 x 13-inch casserole dish.
  5. Sprinkle the cooled hamburger over the beans.
  6. Mix the taco seasoning with the sour cream and spread this mixture over the hamburger layer.
  7. Dice the tomatoes and green onions.
  8. Sprinkle the diced tomatoes over the sour cream mixture.
  9. Sprinkle the green onions over the tomatoes.
  10. Top the salad with grated Cheddar cheese.
  11. Serve with Mexican corn chips.
