Ingredients

  • 1 cup Bisquick
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup chopped onion
  • 1 (10 oz.) package frozen spinach, thawed and drained
  • 1/4 cup Parmesan cheese
  • 4 oz. Monterey Jack cheese, cut into 1/2-inch cubes
  • 1 carton creamed cottage cheese
  • 1/2 teaspoon salt
  • 2 cloves garlic, crushed

Instructions

  1. Preheat oven to 375°F.
  2. Grease a 12 x 7 1/2 x 2-inch pan.
  3. Mix Bisquick, milk, eggs, and chopped onion until well combined.
  4. Beat vigorously for 20 strokes.
  5. Spread the batter evenly in the prepared dish.
  6. Mix thawed and drained spinach, Parmesan cheese, cubed Monterey Jack, creamed cottage cheese, salt, and crushed garlic.
  7. Spoon the spinach mixture evenly over the batter in the dish.
  8. Bake until set, about 30 minutes.
  9. Let stand for 5 minutes before cutting and serving.
