Ingredients

  • 2 lb. lean stew meat
  • 1 onion
  • 1 celery stalk
  • 6 carrots
  • 2 tsp. salt
  • 1 Tbsp. sugar
  • 2 Tbsp. tapioca
  • 1/2 cup tomato juice

Instructions

  1. Cut the lean stew meat into 1 1/2-inch cubes.
  2. Place the meat, sliced onion, chopped celery stalk, and chunks of carrots in an 11 x 7 x 1 1/2-inch pan.
  3. Sprinkle with salt, sugar, and tapioca over the ingredients.
  4. Pour tomato juice over the mixture.
  5. Cover the pan with foil, sealing the edges tightly.
  6. Bake at 250°F (120°C) for 4 hours until the meat is tender.
