Ingredients

  • 1 egg
  • 1 tablespoon sugar
  • 4 tomatoes
  • 2 tablespoons tomato paste
  • 12 lasagna noodles
  • 1 cup mozzarella cheese
  • 1/2 teaspoon red pepper
  • 1 onion
  • 1 teaspoon parsley flakes
  • 1/2 cup parmesan cheese
  • 1 teaspoon basil
  • 1 cup low-fat ricotta cheese
  • 3 cloves garlic
  • 1 pound sausage

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spray a 13 x 9-inch glass baking dish with vegetable oil spray.
  3. Cook lasagna noodles according to package directions; drain.
  4. In a skillet, cook sausage until browned; set aside.
  5. In a bowl, combine low-fat ricotta cheese, chopped parsley flakes, and minced garlic.
  6. Spread a layer of tomato sauce in the bottom of the baking dish.
  7. Layer cooked noodles, tomato paste, cooked sausage, ricotta mixture, mozzarella cheese, and basil.
  8. Repeat layers until all ingredients are used, ending with a layer of mozzarella and parmesan cheeses.
  9. Cover with aluminum foil and bake for 30 minutes.
  10. Remove foil and bake an additional 15 minutes until cheese is bubbly and golden.
  11. Let rest for 10 minutes before serving.
