Leftover Roast Beef Special

A hearty, comforting casserole combining tender leftover roast beef with creamy soups and noodles, perfect for a cozy family dinner or Sunday meal.

Ingredients

  • 1 or 2 lb. roast beef
  • 1 can cream of celery soup
  • 1 can cream of onion soup
  • 1 can cream of mushroom soup
  • 1 small can mushrooms
  • broth from the roast
  • 1 (8 oz.) pkg. noodles

Instructions

  1. Cut the leftover roast beef into bite-sized pieces.
  2. Mix the beef with the three cans of cream soups and the small can of mushrooms.
  3. Cook the noodles according to package directions and add them to the beef and soup mixture.
  4. Add beef broth if the mixture seems a little dry.
  5. Transfer the mixture to a baking dish and bake at 350°F for 45 minutes.
