A hearty, flavorful vegetable soup perfect for using up leftovers, featuring tomatoes, potatoes, and herbs, suitable for a comforting family meal or casual gathering.

Ingredients

  • 1 (32 oz.) can whole tomatoes, chopped
  • 1 (16 oz.) can tomato sauce
  • 1 medium onion, chopped
  • 2 medium potatoes, peeled and cut into bite-sized pieces
  • 1 cup soup stock
  • 1/2 teaspoon ground oregano
  • 1/4 teaspoon sweet basil
  • 1 tablespoon sugar
  • 1 tablespoon butter or oleo
  • 4 bay leaves
  • salt and pepper to taste

Instructions

  1. Put all leftover vegetables into a freezer-safe container and freeze them.
  2. When you have sufficient vegetables, meats, and/or gravies, place them in a large pot.
  3. Add cooked whole tomatoes with juice, tomato sauce, and soup stock.
  4. Add seasoning, onion, potatoes, carrots, and any other desired vegetables.
  5. Bring to a boil; reduce heat and simmer until fresh vegetables are done.
