- In a medium bowl, combine 1 cup flour and 1/4 cup sugar.
- Cut in margarine until mixture resembles coarse crumbs.
- Press the crumbs into the bottom of a greased 9 x 9 x 2-inch pan.
- Bake at 350°F for 15 minutes or until slightly brown.
- In a separate bowl, mix Egg Beaters, lemon juice, lemon rind, and remaining flour and sugar as needed.
- Pour the lemon mixture over the baked crust.
- Bake again at 350°F for an additional 15 minutes or until set.
- Allow to cool and dust with powdered sugar before serving.
