Ingredients

  • 1 1/4 cups flour
  • 1 cup sugar
  • 1/2 cup margarine
  • 1/2 cup Egg Beaters
  • 1/4 cup lemon juice
  • 2 teaspoons grated lemon rind
  • powdered sugar

Instructions

  1. In a medium bowl, combine 1 cup flour and 1/4 cup sugar.
  2. Cut in margarine until mixture resembles coarse crumbs.
  3. Press the crumbs into the bottom of a greased 9 x 9 x 2-inch pan.
  4. Bake at 350°F for 15 minutes or until slightly brown.
  5. In a separate bowl, mix Egg Beaters, lemon juice, lemon rind, and remaining flour and sugar as needed.
  6. Pour the lemon mixture over the baked crust.
  7. Bake again at 350°F for an additional 15 minutes or until set.
  8. Allow to cool and dust with powdered sugar before serving.
