- In a large bowl, dissolve the lemon-flavored gelatin in boiling water.
- Stir in grated lemon peel, lemon juice, and 3/4 cup cold water.
- Chill until the gelatin is partially set.
- Add unbeaten egg whites to the gelatin mixture.
- Beat with an electric mixer until the mixture is light and fluffy, about 1 to 2 minutes.
- Fold in the thawed blueberries and cornstarch mixed with 1/2 cup cold water.
- Pour into 8 custard cups.
- Chill until firm. Slight separation into layers may occur.
