Ingredients

  • 3 oz. lemon-flavored gelatin
  • 1 cup boiling water
  • 1/4 teaspoon grated lemon peel
  • 2 tablespoons lemon juice
  • 3/4 cup cold water
  • 2 egg whites
  • 9-ounce carton frozen unsweetened blueberries, thawed
  • 1 tablespoon cornstarch
  • 1/2 cup cold water

Instructions

  1. In a large bowl, dissolve the lemon-flavored gelatin in boiling water.
  2. Stir in grated lemon peel, lemon juice, and 3/4 cup cold water.
  3. Chill until the gelatin is partially set.
  4. Add unbeaten egg whites to the gelatin mixture.
  5. Beat with an electric mixer until the mixture is light and fluffy, about 1 to 2 minutes.
  6. Fold in the thawed blueberries and cornstarch mixed with 1/2 cup cold water.
  7. Pour into 8 custard cups.
  8. Chill until firm. Slight separation into layers may occur.
