Ingredients

  • 1 1/3 cups flour
  • 1 1/4 cups sugar
  • 2 large lemons
  • 5 egg yolks
  • powdered sugar
  • cooking spray

Instructions

  1. Lightly coat a 9-inch baking pan with cooking spray.
  2. Combine 1 1/3 cups of flour and 1/4 cup of sugar to make the crust mixture.
  3. Add 1/2 cup (1 stick) of butter to the flour-sugar mixture.
  4. Cut the butter into the dry ingredients until the mixture resembles fine crumbs.
  5. Pour the crumbs into the prepared pan and smooth evenly, without pressing too tightly.
  6. Bake in a preheated 350°F oven for 15 to 20 minutes, until the edges are just beginning to brown.
  7. While the crust bakes, prepare the lemon filling by zesting and juicing the lemons, and whisking with egg yolks and sugar as needed.
  8. Pour the lemon filling over the baked crust and bake until set.
  9. Allow to cool, then dust with powdered sugar before serving.
