Lemon Chicken-Mushroom Risotto

Ingredients

  • 6 oz. onion
  • 8 oz. asparagus or snow peas
  • 8 oz. mushrooms
  • 8 oz. chicken breast
  • 1 cup Aborio rice
  • 1 lemon
  • 2 cups chicken stock
  • salt, pepper, cilantro to taste

Instructions

  1. Cut chicken, mushrooms, onion, and snow peas into the same size pieces.
  2. Fry the onion until browned.
  3. Add the rice to the pan and cook for a minute.
  4. Add the chicken and grated lemon rind, cooking until the chicken is cooked through.
  5. Add 7/8 ounces (about 1 cup) of chicken stock and bring to a boil.
  6. Cook for 10 minutes, stirring occasionally.
  7. Add the vegetables and the remaining stock.
  8. Cover and simmer for 10 minutes until rice is tender and flavors are combined.
