Ingredients

  • 1 cup shortening
  • 1 cup granulated sugar
  • 2 eggs
  • 2 teaspoons lemon extract
  • 4 teaspoons grated lemon rind
  • 2 1/4 cups sifted flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup lemon custard chips
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix together thoroughly the shortening, sugar, eggs, lemon extract, and lemon rind.
  3. Sift the flour, baking soda, and salt; stir into the first mixture.
  4. Add chopped pecans and lemon custard chips; mix well.
  5. Drop rounded teaspoonfuls of dough 2 inches apart onto a lightly greased cookie sheet.
  6. Bake for 10 to 12 minutes or until lightly browned.
  7. Cool slightly and remove cookies from the sheet.
