Ingredients

  • 1/2 cup butter or margarine
  • 3 eggs
  • 1 tablespoon milk
  • 1 teaspoon cinnamon
  • 1 cup sugar
  • 1 cup apricot preserves
  • 1 teaspoon baking powder
  • 1 cup sifted flour

Instructions

  1. Cream the butter with sugar until smooth and fluffy.
  2. Add eggs one at a time, beating thoroughly after each addition.
  3. Stir in milk and apricot preserves.
  4. In a separate bowl, sift together baking powder, cinnamon, and flour.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into a waxed paper-lined 8x8 inch pan or dish.
  7. Bake in a preheated 350°F (175°C) oven for 1 hour and 15 minutes.
  8. Allow to cool slightly before serving.
