Ingredients

  • 4 c. flour
  • 3/4 c. shortening
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1 tsp. baking soda
  • 1/2 c. milk
  • 3/4 c. sugar
  • 2 boxes lemon pie filling

Instructions

  1. Work flour, shortening, and baking powder into a pie crust-like dough.
  2. Add salt, eggs, baking soda, milk, and sugar.
  3. Mix ingredients until well blended and the dough can be rolled on a floured surface.
  4. Divide dough into two parts.
  5. Roll the first part out to fit a cookie sheet.
  6. Prepare two boxes of lemon pie filling according to package directions.
  7. Spread the lemon pie filling evenly over the dough.
  8. Cover with another layer of dough.
  9. Prick some holes in the top layer to allow steam to escape.
  10. Seal edges with the tines of a fork.
  11. Bake at 350° for 30 minutes, or until lightly browned.
  12. When cool, sprinkle with powdered sugar and cut into squares.
