  • 1/2 cup shortening
  • 1/3 cup sugar
  • 1/4 cup lemon juice
  • 2 eggs
  • 3/4 cup evaporated milk
  • 1/4 cup water
  • 1 (8 oz) package cream cheese
  • 1/2 cup nuts

Instructions

  1. Cut cream cheese into 1/4-inch cubes and refrigerate.
  2. Sift together flour, baking powder, and salt.
  3. Cream the shortening until smooth.
  4. Add eggs one at a time, beating well after each addition.
  5. Alternate adding water and dry ingredients to the creamed mixture.
  6. Fold in the cream cheese, nuts, and lemon rind.
