Ingredients

  • soda cracker crumbs
  • sugar
  • baking powder
  • flour
  • lemon pie filling
  • coconut
  • butter

Instructions

  1. Prepare lemon pie filling and set it aside to cool.
  2. Mix soda cracker crumbs, sugar, baking powder, flour, coconut, and melted butter to make the crumb mixture.
  3. Save 1 cup of the crumb mixture for topping.
  4. Grease a pan with butter.
  5. Press the remaining crumb mixture into the prepared pan.
  6. Spread the cooled lemon pie filling over the crumb base.
  7. Sprinkle the reserved 1 cup of crumb mixture on top of the lemon filling.
  8. Bake at 350°F until the top is golden brown, about 30 minutes.
