Ingredients

  • 1 cup sugar
  • 1/4 cup flour
  • 1/8 teaspoon salt
  • 2 tablespoons butter, melted
  • 5 tablespoons lemon juice
  • Grated peel of 1 lemon
  • 3 egg yolks, well beaten
  • 1 1/2 cups milk, scalded
  • 3 egg whites, beaten stiff

Instructions

  1. Combine sugar, flour, and salt in a bowl.
  2. Add melted butter, lemon juice, and grated lemon peel; mix well.
  3. Add this mixture to the beaten egg yolks and scalded milk; mix thoroughly.
  4. Fold in beaten egg whites gently.
  5. Pour the mixture into greased custard cups.
  6. Bake in a pan of hot water in a 325°F oven for 45 minutes, or until set.
