Ingredients

  • 1/2 cup fine breadcrumbs
  • 2 teaspoons grated lemon rind
  • 3 tablespoons lemon juice
  • 2 tablespoons country-style Dijon mustard
  • 1 tablespoon lime juice
  • 6 (4 oz.) boneless, skinless chicken breasts
  • Lemon slices (for garnish)

Instructions

  1. Combine breadcrumbs and lemon rind, stirring well.
  2. Mix lemon juice, mustard, and lime juice; brush mixture over both sides of the chicken breasts.
  3. Dredge chicken in the breadcrumb mixture.
  4. Place chicken in a baking dish coated with pan spray or coating.
  5. Sprinkle remaining breadcrumbs over the chicken.
  6. Bake uncovered at 375°F (190°C) for 15 minutes, then turn over and bake an additional 15 minutes. Garnish with lemon slices if desired.
