Ingredients

  • 1/4 cup minced celery
  • 1/4 cup minced onion or shallots
  • 2 tablespoons minced green peppers
  • 2 tablespoons butter or oleo
  • 1 1/2 cups chicken broth
  • 2 tablespoons minced fresh parsley
  • 1 teaspoon herb seasoning
  • 2/3 cup wild rice
  • 2 (1 to 1 1/4 lb.) Cornish hens
  • dash of pepper
  • 1/4 cup butter or oleo
  • 1/4 cup brandy

Instructions

  1. Saute minced celery, minced onion or shallots, and green peppers in 2 tablespoons of butter or oleo in a saucepan.
  2. Stir in chicken broth, minced parsley, and herb seasoning; bring to a boil and add wild rice.
  3. Cover and reduce heat to medium-low; cook about 25 minutes until rice is tender.
  4. Remove giblets from hens and reserve for another use.
  5. Rinse hens with cold water and pat dry.
  6. Sprinkle hens inside and out with salt and pepper.
  7. Lightly stuff hens with the cooked rice mixture.
  8. Secure the cavities with toothpicks or kitchen twine.
  9. Bake at 375°F for 30 minutes until golden and cooked through.
  10. In a small saucepan, melt 1/4 cup butter or oleo and add brandy; heat gently before serving.
