Ingredients

  • 1 1/2 c. sifted flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. margarine, melted
  • 1/2 c. milk
  • 2 eggs
  • grated peel of 1 lemon

Instructions

  1. Preheat oven to 350°F. Grease an 8 x 4-inch loaf pan with margarine and coat with granulated sugar.
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, mix melted margarine, milk, eggs, and grated lemon peel until smooth.
  4. Add the margarine mixture to the flour mixture and stir just until the flour is moistened.
  5. Pour the batter into the prepared pan.
  6. Bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool for 5 minutes before removing from the pan.
