Chewy, lemon-flavored oat cookies with a tender crumb and a hint of citrus, perfect for tea time or as a light, sweet snack for any occasion.

Ingredients

  • 2 cups margarine
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 3 cups Quaker oats, uncooked
  • 1 tablespoon grated lemon peel
  • 1 teaspoon vanilla

Instructions

  1. Beat margarine and sugar until creamy.
  2. Add remaining ingredients except powdered sugar. Mix well.
  3. Cover and chill the dough for 30 minutes.
  4. Preheat oven to 350°F (175°C).
  5. Shape dough into 1-inch balls and place on an ungreased cookie sheet.
  6. Flatten each ball with the bottom of a glass dipped in powdered sugar.
  7. Bake for 12 to 15 minutes or until edges are light golden brown.
  8. Cool for 1 minute on the cookie sheet, then remove to a wire rack.
  9. Cool completely and sprinkle with powdered sugar, if desired.
