Ingredients

  • 28 oz. can low-sodium whole tomatoes
  • 2 Tbsp. olive oil
  • 1 c. onion, diced
  • 20 oz. pkg. cut green beans
  • 1 Tbsp. granulated sugar
  • 1/2 tsp. salt
  • Dried oregano
  • Freshly ground black pepper

Instructions

  1. Drain the tomatoes, reserving the juice. Remove the stem ends from the tomatoes and seed, if desired. Break the tomatoes into chunks.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add diced onion and cook until softened, about 5 minutes.
  4. Add the green beans, chopped tomatoes, reserved tomato juice, sugar, salt, oregano, and black pepper.
  5. Cover and cook on low heat for about 2 hours, stirring occasionally, until flavors meld and beans are tender.
  6. Taste and adjust seasoning with additional salt and pepper if needed before serving.
