Ingredients

  • 1/4 cup bread crumbs
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon parsley flakes or 3 tablespoons chopped fresh parsley
  • 3 chicken breasts, split, skinned and halved
  • 1/2 cup margarine, melted
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine bread crumbs, grated Parmesan cheese, and parsley flakes or chopped fresh parsley in a bowl.
  3. Dip each chicken breast half into the crumb mixture, coating both sides.
  4. Place the coated chicken breasts on a shallow baking dish.
  5. Melt margarine in a small saucepan over low heat.
  6. Stir in lemon juice into the melted margarine.
  7. Drizzle the lemon-margarine mixture over the coated chicken breasts.
  8. Bake uncovered for 1 hour or until cooked through.
