Ingredients

  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 1/4 cup butter
  • 1 cup milk
  • 1 cup sour cream
  • 1 (9-inch) baked pie shell
  • 1 tablespoon grated lemon rind
  • 1/4 cup lemon juice
  • 3 eggs

Instructions

  1. Combine sugar and cornstarch in a saucepan with butter, lemon rind, lemon juice, and egg yolks.
  2. Stir in milk and cook over medium heat, stirring constantly, until thickened.
  3. Remove from heat and cool.
  4. Fold in sour cream.
  5. Pour into baked pie shell.
  6. In a separate bowl, beat egg whites, 1/4 cup sugar, and cream of tartar until stiff peaks form to make meringue.
  7. Spread the meringue over the filled pie.
  8. Bake at 400°F (200°C) until the meringue is golden brown.
  9. Chill the pie for 2 hours before serving.
