Ingredients

  • 2 pkg. lime gelatin
  • 3 c. boiling water
  • 1/4 c. lemon juice
  • 1 c. mayonnaise
  • 2 c. cooked chicken or flaked tuna
  • 1 (1 lb. 3 oz.) can pineapple chunks, drained
  • 1/2 c. toasted almonds

Instructions

  1. Dissolve lime gelatin in boiling water.
  2. Add lemon juice and mayonnaise; mix well.
  3. Chill in refrigerator until mixture begins to congeal.
  4. Beat the mixture well.
  5. Add cooked chicken or tuna, drained pineapple chunks, and toasted almonds; mix thoroughly.
  6. Pour into a lightly oiled 2-quart mold.
  7. Chill until set.
  8. Unmold onto salad greens and garnish as desired.
