Ingredients

  • 3/4 cup cooking oil
  • 3 pounds chicken gizzards, chopped
  • 1/4 pound ground beef
  • 1/4 pound ground pork
  • 3/4 cup chopped bell pepper
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 2 cups cooked rice
  • 5 cups water
  • 1 cup chopped onion tops
  • 1/2 cup parsley
  • Salt and pepper to taste

Instructions

  1. Brown the gizzards in oil until well cooked.
  2. Add ground pork and beef, and brown them. Add small dabs of water at intervals to prevent burning until the meats are browned.
  3. Add chopped bell pepper, onion, and celery to the mixture.
  4. Season with salt and pepper to taste.
  5. Add 1 to 2 cups of water and simmer the mixture for about an hour.
  6. Stir in the cooked rice and mix thoroughly.
  7. Add chopped onion tops and parsley, then simmer for about 15 to 20 minutes.
