Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 cup chicken stock
  • 1/2 cup dry white wine
  • 1/2 tsp. tarragon
  • salt and pepper
  • 4 oz. can mushroom pieces or 1/4 lb. fresh sliced mushrooms
  • 1/2 cup half and half

Instructions

  1. Melt butter in a saucepan and add flour.
  2. Cook, without browning, stirring constantly, for several minutes.
  3. Slowly add chicken stock, white wine, tarragon, salt, and pepper. Simmer for several minutes.
  4. Add sliced mushrooms and simmer for 5 minutes.
  5. Remove from heat and stir in half and half mixed with egg yolk.
  6. Cook, stirring, until heated through. Do not let boil.
  7. Reheat if made a day ahead.

Tips & Substitutions

For a richer flavor, consider using a mix of fresh mushrooms like cremini or shiitake instead of canned. You can substitute the dry white wine with chicken broth for a non-alcoholic version, though the flavor will differ slightly. If you prefer a thicker sauce, increase the flour to 3 tablespoons. Be cautious not to let the sauce boil after adding the half and half to prevent curdling.

Serving Suggestions

This mushroom wine sauce is perfect over grilled chicken or pasta and pairs beautifully with Arroz Con Pollo. For a complete meal, serve it alongside sautéed green beans or a fresh salad. It's also delightful drizzled over roasted vegetables for a flavorful vegetarian option.

Storage & Reheating

Store any leftover mushroom wine sauce in an airtight container in the refrigerator for up to 3 days. When reheating, do so gently over low heat while stirring to maintain its creamy texture. If the sauce thickens too much, add a splash of chicken stock or half and half to loosen it.

Frequently Asked Questions

Can I use a different type of wine for this sauce?

Yes, you can experiment with different dry white wines like Sauvignon Blanc or Pinot Grigio. Each will impart a unique flavor to the sauce. Just ensure it's a wine that you enjoy drinking, as the quality will affect the final taste.

Is there a way to make this sauce vegetarian?

Absolutely! Replace the chicken stock with vegetable broth and ensure the half and half is a plant-based alternative. This will keep the sauce flavorful while making it suitable for vegetarians.

How can I make this sauce spicier?

To add some heat, consider incorporating a pinch of red pepper flakes or a dash of hot sauce when you add the tarragon. This will give the sauce a nice kick without overpowering the other flavors.
